1kg chicken wings.

1 Tbsp baking powder

1 tsp salt

3 Tbsp Hot Sauce

¼ cup BBQ sauce

3 garlic cloves (minced)

Preheat oven to 210°C.

Line a baking tray with foil. Pat dry chicken wings with a paper towel . Place the wings in a large bowl. Add the baking powder, salt

and pepper. Mix by hand until all wings are evenly coated. Spread the wings on the baking tray. Place the tray with the wings in the oven and bake at 210° C for 25minutes. Meanwhile, prepare the sauce by combining the hot sauce, the BBQ sauce and the minced garlic in a small bowl. Carefully remove the baking tray from the oven and place on a cooling rack. Let rest for 5 minutes.

Add the wings to the sauce, then mix them and ensure all wings are evenly coated with the sauce. Transfer the wings back to the baking tray and bake for additional 10 minutes at 200 °C turning once halfway, or until the wings are nicely browned and start to char. This usually takes no more than 15 minutes depending on how your oven operates. Remove from the oven and serve hot.
